Beef Braised in Soy Sauce

Prep Time: 10 minutes

Cook Time: 1 hour, 35 minutes

Ingredients:

  • 4 turnips (about 1 1/2 pounds)
  • 3 large carrots
  • 3 slices ginger
  • 2 green onions
  • 2 tablespoons oil, or as needed
  • 2 pounds boneless stewing beef, cut into chunks
  • 3 cups beef broth
  • 1 cup water
  • 2 tablespoons Chinese rice wine or dry sherry
  • 3 tablespoons dark soy sauce
  • 1 tablespoon light soy sauce
  • 1 tablespoon brown sugar

Preparation:

Chop the turnips into bite-size chunks. Peel the carrots and cut on the diagonal into 1-inch pieces. Chop the ginger. Cut the green onions into thirds.

In a wok or large saucepan, heat the oil over medium-high heat. Add the ginger. Cook until softened then brown the beef. Add the beef broth, water, rice wine or sherry, and 1 tablespoon of the dark soy sauce. Bring to a boil. Reduce the heat and simmer, covered, for 1 hour.

Add the chopped vegetables, the light soy sauce, the remainder of the dark soy sauce, and the brown sugar. Simmer, uncovered, for another 30 minutes. Taste and adjust the seasoning, adding salt, pepper, or soy sauce as desired. Serve hot with rice or noodles.

Beef With Broccoli

3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces

Marinade for Beef:
1 egg
1/3 tsp (1.5 mL) salt
1 Tbsp (15 mL) cooking wine
1 Tbsp (15 mL) cornstarch (corn flour)
2 Tbsp water
1 1/2 Tbsp (20 mL) oil
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
1 cup (250 mL) cooking oil
2 1/2 Tbsp (30 mL) oyster sauce
2 Tbsp (25 mL) light soy sauce
3/4 Tbsp (10 mL) dark soy sauce
1 Tbsp (15 mL) sugar
a few drops of sesame oil
2 cloves garlic, crushed
1/2 cup (125 mL) chicken broth
2 Tbsp cornstarch (if desired)

Directions:

Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.

Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.

Flaky Deep-fried Beef Balls

400 grams (0.88 lb) beef
150 grams (0.33 lb) wheat flour
1 gram (1/4 tsp) baking powder
1 gram (1/4 tsp) MSG
5 grams (5/6 tsp) salt
20 grams (2 tbsp) dry cornstarch
0.2 gram (1/20 tsp) pepper powder
0.5 gram (1/10 tsp) sesame oil
500 grams (1 cup)oil (only 1/10 of it to be consumed)
100 grmas (6 tbsp) water

Directions:

1. Grind the beef into minced meat and put it a bowl. Add the salt, MSG, and pepper powder and stir well. Add the dry cornstarch and mix well. Shape the mixture into balls about the size of pigeon eggs. Steam for 15 minutes.

2. Use the flour and baking powder to make a paste.

3. One by one put the meatballs in the flour paste and totally cover them with the paste.

4. Heat the oil in a wok to 200-220ºC (390-430ºF). Deep-fry the bals wrapped in flour paste until they are golden yellow in oclor. Place them on a plate and sprinkle the sesame oil over them. The dish is ready to serve.

Features: Golden yellow in color, crispy outside and tender inside.
Taste: Crispy, salty and delicious.

Sliced Beef with Pineapple

300 grams (0.66 lb) beef tenderloin
75 grams (0.165 lb) canned pineapple
1 egg white
2 grams (1/3 tsp) salt
30 grams (2 tbsp) water
10 grams (1 1/2 tbsp) dry cornstarch
10 grams (2 tsp) mixture of cornstarch and water
5 grams (1 tsp) cooking wine
100 grmas (7 tbsp) cooking oil
5 grams (1 tsp) mashed garlic

Directions:
1. Cut the beef into slices 6 cm (2.4 inches) long, 3 cm (1.2 inches) wide and 0.3 cm (0.12 inch) thick. Add 1 g (1/6 tsp) of salt, dry cornstarch and egg white, and mix well.

2. Cut the pineapple into slices of a size similar to that of the beef.

3. Heat the oil to 110-135ºC (230-275ºF) and stir-fry the beef slices until they are done. Take out and drain off the oil.

Stewed Beef

Stewed BeefIngredients:

500g beef

1/2 onion (chop)

Seasoning:

A. 1 carrot, 1/2 radish

B. 1 Tbsp wine, 10ml soy sauce, 2 tomatos, 1/2 tsp salt, 5 cup water

Methods:

1. Cut the beef into cubes, blanch them and remove

2. Fry chopped onion in 3 tsp oil, stir with B, then put the beef in and cook for 20 min, Add  A and stew for half an hour, thicken with cornstarch mixture.
