Three-flavor Noodles

three flavor noodles Three flavor Noodles Ingredients:
500 grams (1.1 lb)wheat flour
6 eggs
15 grams (1/2 oz) green vegetables (rape)
15 grams (1/2 oz) mushrooms
15 grams (1/2 oz) sliced bamboo shoots
5 grams (1 tsp) lard
5 grams (5/6 tsp) salt
1 gram (1/4 tsp) MSG
100 grams (8 tbsp) cooking oil
1 gram (1/4 tsp) pepper powder

Directions:
1. Mix the whipped eggs and lard with the flour, roll the dough repeatedly. Use a roller to make it very thin and fold to cut into hand-made noodles.

2. Put 1500 g(3 cups) of water in a pot and heat to boiling point. Add in the noodles and cook for about 5 minutes. Take them out and wash with cold water. Mix the noodles with 5 g (1 tsp) of cooking oil. Arrange the noodles in the shape of a pancake. Wash clean the green vegetables, mushrooms and bamboo shoots.

Steamed Stuffed Bun – (Baozi)

Yields 24 buns

Ingredients:

  • 1 package dried yeast or 1 cake fresh yeast
  • 1 cup lukewarm water
  • 4 1/2 cups flour
  • 1/4 cup sugar
  • 2 tablespoons Crisco or vegetable oil
  • 1/2 cup boiling water
  • 2 tablespoons sesame seed oil

Preparation:

Dissolve yeast in lukewarm water. Add 1 cup of flour. Mix thoroughly. Cover with cloth. Let rise 1 hour, until bubbles appear.

Dissolve sugar and vegetable oil in 1/2 cup boiling water. Stir well. Cool until lukewarm. Pour into yeast mixture. Add 3 1/2 cups flour.

Knead dough on lightly floured board until smooth. Put into extra large, greased bowl in a warm place. Cover with damp cloth. Let rise until double in bulk, about 2 hours.

Chinese Flower Roll – (Hua Juan)

Yields: About 12 Rollsflower roll Chinese Flower Roll   (Hua Juan)

Ingredients:

  • 2 teaspoons active dry yeast
  • 1 1/2 cups lukewarm water
  • 1 tablespoon granulated sugar
  • 3 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 2 teaspoons water
  • 4 tablespoons sesame oil, or as needed
  • 1 teaspoon salt
  • Scallions (spring or green onions), finely chopped, as desired

Preparation:

Place the yeast in a bowl and pour the warm water over. Stir in the sugar to dissolve. Let stand for 15 minutes.

Sift the flour into a bowl. Add the yeast and water mixture and begin stirring immediately. Keep stirring until you have a dough that holds together and doesn’t stick to the sides of the bowl. Adjust the amount of water, adding more or less as is needed.

Chinese Steamed bread – (Man Tou)

This is a basic Chinese steamed dough recipe. When preparing a specific recipe such as Flower Rolls, the instructions will call for adding baking powder to the dough to give it extra lift.

Ingredients:
