Beef Strips with Taro

Beef Strips with TaroIngredients

1/2 lb. tender beef, 1 small taro, 1T white sesame seeds

Seasonings

(1) 1T cooking wine,1/2T soy sauce,1/2t sugar, 1/2 egg yolk, 1T cornstarch

(2) 1t salt

Methods

1. Cut beef into strips and marinate in seasoning (1) for 10 minutes.Peel taro and rinse well, then slice and steam until done insteamer.Dry-fry white sesame seeds in wok until fragrant and remove.

2. Heat 2 bowls of oil in wok, deep-fry beef strips in smoking oil until crispy and remove.Mash taro while still steaming,then stir-fry over low heat in wok with 2T of oil added until well-mashed. Season with seasoning (2) and 1/2C water to taste,then remove to serving plate.

3. Make a well in mashed taro and arrange beef strips in center.Sprinkle with white sesame seeds. Serve by dipping beef strips in mashed taro.

Remarks:

1. When marinating beef,add cornstarch from seasoning (1)after the rest seasonings have been absorbed by beef, to prevent the flavor of the ingredients from being absorbed by the cornstarch instead of the meat.

2. To prevent the beef strips from sticking together when deep-frying, separate them and deep-fry a few at a time.

3. 1C (cup)=150ml; 1T (Table Spoon)=15ml; 1t(tea spoon)=5ml, 1/2t(tea spoon)=2.5ml, 1/4t(tea spoon)=1.2ml

    OMG it looks supre yummy. Wine will do better with it.
